This course has been designed to develop your practical skills and enhance your knowledge while helping you gain an advanced professional qualification.
You will learn how to prepare, cook and present a variety of dishes using fish and shellfish, meat, poultry and game in addition to a broad range of vegetable dishes sauces and dressings.
You will investigate gastronomy and food culture, as well as developing your research and supervisory skills and finding out about the latest industry related regulations. As you develop your expertise and your confidence, you will be encouraged to take part in competitions at both national and international level.
In addition to your main qualification Level 3 Diploma in Advanced Professional Cookery (Kitchen Larder) you will also have the opportunity to gain industry recognised qualifications i.e. Allergen Awareness, COSHH, Healthy Foods and Special Diets; Manual Handling. Essential Skills or GCSEs (depending on your current grade) will also be an integral part of the course.
