Course Description
This course is for anyone who would like to learn how to cook from scratch.
You will learn how to:
- keep yourself and others safe in the kitchen
- create home-cooked dishes from scratch
- save money when shopping
- use different cooking methods
- reduce food waste

These courses are for anyone who would like to learn how to cook home cooked meals from scratch.
Home Cooking for Beginners
This course is open to anyone and is for complete beginners or those who want to build their confidence.
You will learn how to:
- keep yourself and others safe in the kitchen
- Prepare and cook home-cooked dishes from scratch such as:
- Simple pasta sauces
- Lasagne
- Cottage pie
- Risotto
- Soup
- Curry
- use different cooking methods e.g. boiling, grilling and baking
- reduce food waste
- Understand how to prepare food that is safe for those with allergies
Home Cooking - Healthy Eating
This course is open to all, ideally you will have completed the Home Cooking for Beginners course first or have some basic cooking skills already.
You will learn:
- An introduction to the healthy eating model for the UK including:
- A balanced diet
- Portion amounts
- Required portions for an adult per day/week
- Planning a healthy menu
- Healthy hydration
- ‘Fakeaway’ dishes - healthy home-cooked versions of takeaway dishes
- Nutritious soups
- Meat free meals
- Batch cooking
- Desserts for healthy eating
Home Cooking - Baking for Beginners
This course is open to all.
You will learn how to:
- Follow basic hygiene procedures for producing baked goods
- Understand how to reduce the risk of cross contamination
- Prepare bake and finish a variety of home baked goods
- Produce baked goods using a range of methods such as:
- Rubbing in
- Melting method
- Whisking
- Creaming
- Examples of the types of baked goods include:
- Lemon Drizzle
- ginger bread
- Classic sponge
- Scones
- Swiss roll
- Basic biscuits
There may also be opportunity for learners to prepare and serve an afternoon tea to our lunch club members.
Home Cooking - Intermediate
This course is for those who have some basic knowledge already and are looking to build on existing skills. You may have already completed the Cooking for Beginners or the Home Cooking Healthy Eating course.
You will learn how to:
- Follow basic hygiene procedures
- Understand how to reduce the risk of cross contamination
- Prepare ingredients using a range of preparation methods
- Cook ingredients following a range of cooking methods:
- Poach
- Grill
- Steam
- Boil
- Bake
- Present dishes ready for serving
- Prepare, cook, present and serve dishes
The types of dishes to be cooked will be discussed and agreed upon with the group at the start of the course.
Home Cooking - Preparing a two course meal
This course is for those who are able to cook fairly competently and would like to advance their skills further. Ideally you will have completed at least one of our Home Cookery courses.
You will learn how to:
- Identify and describe a variety of different cooking methods
- Discuss advantages and disadvantages of different cooking methods
- Plan a menu for a two course meal
- Identify ingredients and quantities needed
- Prepare, cook, present and serve a two course meal
- Demonstrate how to keep the kitchen clean and hygienic including:
- Cleaning work surfaces and equipment
- Handling waste
- Storing leftover food
The types of dishes to be cooked will be discussed and agreed upon with the group at the start of the course.
