Course Description

This course is designed for a wide variety of students who are interested in further developing skills in advanced cake decoration and sugar craft as either vocational study or personal interest. There is an awarding body registration fee payable (approx £80).

You will learn how to produce celebration cakes using a variety of techniques:

  • Royal Icing Coating and Advanced Piped work/decoration
  • Collars and panels
  • Wedding Cake (tiered)
  • Wired Sugar Flowers
  • Shaped Novelty Cake
  • Design and Theory

Entry Criteria

Cake Decoration Level 2

You will be required to wear a Chef jacket and hat to class.


You will study by hands-on practical sessions and demonstration.


Practical assessment and portfolio building


  • Working in a Bakery, Patisserie, Tea Rooms, own business
  • Patisserie L3
