The aim of the course is to:

  • Show how we can preserve meat products using different techniques and processes
  • To further enhance flavour
  • To be able to achieve better returns on your carcass, with full carcass utilisation

We recommend clients accessing our practical butchery courses first, prior to this course for beginners.
