Ex-Coleg Llandrillo student, Great British Menu star and head chef at the prestigious Cowley Manor Hotel in the Cotswolds, David Kelman, delivered a virtual seafood masterclass to Hospitality and Catering students at Grŵp Llandrillo Menai, much to the delight of those in attendance.

Coleg Llandrillo chef lecturer Brian Hansen said:

We were delighted that ex-Llandrillo student and award-winning chef David Kelman returned to his former college, showcasing an amazing fresh catch of regionally-sourced Welsh seafood, including wild bass, lobster and mussels, supplied by local supplier Mermaid Seafoods. This event was all about using technology to find safe and creative ways to link industry, suppliers and our students, who are the future of the hospitality industry.

Adhering to Covid-safe college protocol whilst motivating and inspiring our students with links to industry is such an important part of our training programmes. The demonstration was beamed live via Youtube to Hospitality and Culinary Arts students - from Level 1 vocational up to degree level - at three of our campuses: Rhos-on-Sea, Bangor and Dolgellau.

The event was supported by Seafish, the public body that supports the UK seafood industry.

David Kelman, who has represented Wales in a number of international competitions, said:

I had a great day passing on knowledge to the students, going back to where it all started. I had many happy days at Coleg Llandrillo.

For David, it all started at the age of 13 as a kitchen porter back here in North Wales. He was involved in prepping for the chefs and loved it. He then completed his chef training at Coleg Llandrillo's Rhos-on-Sea campus, before starting his career at Bodysgallen Hall, which taught him a lot about fine dining.

Dr Holly Whiteley, Seafish regional manager for Wales, said:

We're absolutely delighted to support this virtual celebration of Welsh seafood. It's a great opportunity to educate students and promote the fantastic variety of delicious fish and shellfish that we have around our Welsh coast. Our support for this event is part of our wider Marketing Seafood through Education (MaSTE) initiative, through which we are working with local colleges and industry to get more seafood on menus in Wales.
