A Coleg Llandrillo trainee chef scooped the bronze medal in the 'Young Risotto Chef of the Year 2019' national competition in London recently, after battling it out with the top ten finalists in a cook-off at Westminster Kingsway College.

Oliver Parry-Molloy, who is 21-years-old and lives in Llandudno, prepared a Caramelised Celeriac, Thyme and Hazelnut Risotto, which was awarded a top three place by the judges at the celebratory dinner afterwards, at one of Gordon Ramsay's eateries in the capital.

He will now be given three days' work experience at The Italian Embassy in London, with head chef Danilo Cortellini, for the planning and execution of a gala dinner.

Oliver's success comes hot-on-the-heels of his appearance at the Culinary World Cup in Luxembourg, where his supporting role as a commis chef with Culinary Team Wales won him a medal.

His résumé is looking increasingly impressive after also being a finalist in the highly-renowned Nestlé Professional Toque d'Or competition, qualifying for the national final of UK Young Seafood Chef of the Year 2018 (after winning the Western heat), winning a silver medal at the Welsh International Culinary Championships, and entering several competitions in Holland.

It was great fun to take part in this competition, and I have learnt so much,

commented Oliver.

It is great to get feedback on my dish from such prestigious judges and I am really looking forward to my prize of cooking at The Italian Embassy. It will be an honour and an amazing experience.

One of Oliver's tutors at the college's Rhos-on-Sea campus, Mike Evans, said:

The competition was judged by a series of celebrated chefs: Danilo Cortellini (former professional MasterChef finalist), Davide Degiovanni (head chef at Gordon Ramsay's Union Street Café) and Paul Gayler MBE (former executive chef at The Lanesborough), Oscar Holgado (head chef at Angela Hartnett's Murano Restaurant), Adriano Cavagnini (executive chef at Four Seasons Hotels), along with broadcaster and food journalist, Petrie Hoskin.
