  • Prepare students for possible employment in this area of work

Delivery:

You will study:

  • Royal Icing and Wedding Cakes
  • Various run outs, tube and brush embroidery, pressure piping
  • Collars – full double and side panels
  • Lettering, to include monograms and ornate lettering
  • Run-out crest
  • Badges and ornaments
  • Oriental Stringwork
  • Collage
  • Exhibition cake
  • Tiered wedding cake
  • Sugar paste and modelling
  • Extension work
  • Lace pieces and ribbon insertion
  • Quilling and collage work
  • Pastillage
  • Modelling of animals and figures
  • Air brushing

You will learn by practical hands-on sessions and demonstrations. Producing practical pieces, a written portfolio and designing/drawing of work.

Assessment:

You will be required to wear a white lab style coat or chef’s jacket to class.
